"jean-marc quarin: remarkable work in the context of the vintage. this year's vintage is based around 71% cabernet (69% cabernet sauvignon, 2% cabernet franc), a very high proportion. the rest is made up of 20% merlot and 9% petit verdot. intense, lively and purple colour. fruity and even truffled nose. from the start, the wine is present and offers a lot of fruit. the construction is impeccable: tasty, juicy, pleasant, full-bodied. a good seductive and perfumed finish. a feat given the rain that has fallen. and above all a lot of work and reflection. well done and thank you for showing that so much is possible in bordeaux while so many people ignore it. the soil is worked by ploughing under the vine stock with grassing in the middle of the row on 100% of the vineyard, splitting if necessary, systematic manual leaf thinning, thinning of the bunches, organic amendment, reasoned phytosanitary treatments, no anti-botrytis, sexual confusion to fight against grape worms. the yield is 55 hectolitres/hectare, i.e. approximately 1 kg of grapes per vine (6 to 8 bunches/plant). the vinification is traditional. when the grapes arrive at the winery, they are sorted twice before and after de-stemming on vibrating tables. this is followed by vatting with a peristaltic pump (cold pre-fermentation at 8° to 10° for 48 to 72 hours) and vinification by pumping over in concrete vats, running off into vats and pressing with a vertical press. the nose is fruity and offers greediness as well as good definition and a fine grain. there are notes of boysenberry, juicy blackcurrant and, more lightly, small berries associated with touches of rose, iris, racy minerality and a discreet hint of clove and cardamom. the palate is fruity, balanced and offers good definition, a mineral/juicy frame, good definition and fine grain. on the palate this wine expresses notes of pulpy/juicy blackberry, blackcurrant and more lightly small red berries combined with hints of cherry, iris, lilac and fine points of racy minerality, nutmeg and clove."
