en chailloux is closely linked to the history of the dagueneau estate, since it is the first 1.2 hectare plot purchased around saint adelain by didier dagueneau and vinified as a plot cuvée from 1982 until the 2000s. small plot then joined four other terroirs to form the blanc fumé de pouilly cuvée. for several years, louis benjamin dagueneau has been offering a new vintage in chailloux, this time from a small plot of sancerre, an appellation which borders pouilly fumé. the winegrower continues on the path traced by his father, cultivating the vines with meticulous care using sustainable farming, practicing plowing and severely limiting yields. at the harvest, the sorting is rigorous, and the sauvignon vinified as close as possible to naturalness using a selection of native yeasts. long aging takes place in large containers, cigars, tons, or half-muids, without racking, followed by six to eight months in vats. with great purity of expression, this lively and fresh cuvée displays a sparkling minerality, delightfully combining citrus and stony notes.
