"dominique andiran was once a ski and sailing instructor, but became fascinated with winemaking in 1988 when his uncle asked him to help harvest that year's crop. his uncle made only a small amount of wine and sold most of the grapes to a large producer in gascony who was close to his vineyard. and then something horrible happened! he was spraying the vines with insecticides when he became seriously ill and ended up in hospital. during his convalescence he decided that he would ""stop growing grapes or do it differently"". in 2000, he switched to organic viticulture and started making his own wine instead of selling the grapes. this was a major change because of the 20,000 hectares given over to the vineyards of the gascon coast, only 500 hectares were organic at the time and only 30 hectares were used to produce natural wines. the colour is golden, bright, but slightly cloudy. the nose has notes of reduction on opening before opening up to butter-roasted yellow and white fruit, honeycomb and candied citron peel, with a hint of smoke. the palate is spherical, generously sized, with a ripe, mellow feel, exalting warm apple and peach, and managing the feat of remaining crisply fresh. a slight touch of carbon dioxide must have something to do with it. the delightful finish is even more concentrated, peppy and fresh, with noble bitters (apricot stone, light cobbler) balancing the ripe aromatics, and a persistence on apricot and spices."
