Santorini is a small archipelago of Greek volcanic islands located in the Aegean Sea south of the Cyclades. This island of 76 km2 is mainly known for its partly collapsed caldera which offers a breathtaking landscape. Santorini is certainly the oldest vineyard in the world. It is said to be the birthplace of winemaking.
The volcanic soil is composed of schist and limestone. Successive eruptions have covered it with slag, ashes, lava and pumice stones. It is this soil that gives all the typicity of Santorini wines and especially the strong minerality found in the dry white wine. The island of Santorini experiences extreme climatic conditions. In the absence of rainfall, the vines receive sea mist during the summer nights which deposits a significant amount of water to which is added the morning dew.
More than 30 different varieties of vines are specific to Santorini. Among them, Assyrtiko, Athiri and Aidini are the most famous of the white varieties. They produce excellent dry white wines as well as the sweet wine of Santorini, Vinsanto. Assyrtiko has the particularity of maintaining excellent acidity even in the hot climate of Santorini.
