louis gaspard d'estournel had already perceived the remarkable potential of his vines. driven by this intuition, he continuously expanded the vineyard, acquiring the best parcels of the hill, recognized as "unique class of second category", the highest level of terminology then in use. today, the 100 hectares of cos d'estournel consist of a mosaic of numerous parcels. planted two-thirds with cabernet sauvignon, they are complemented by merlot, and to a lesser extent by cabernet franc and petit verdot. with an average age of 45 years, the cos d'estournel vineyard has some very old vines, many between 80 and 100 years old, representing an incomparable opportunity for the property. these old vines bring depth and structure to the wine, reflecting the complexity of the soil from which they draw the deepest elements. the grand vin of cos d'estournel is made with grapes from vines around 55 years old on average. the terroir of cos d'estournel benefits from a privileged geographical position, in the heart of a hilly region of the northern médoc. the origin of the name cos, which means "hill of stones" in old gascon, perfectly illustrates this topography. the central part of the vineyard is established on a plateau of deep gravel, from which two slopes extend. one faces east and the other south, resting on soils of gravel and clay. additionally, a clayey vein crosses the property diagonally. the grape varieties and viticultural practices on the property are tailored to the exposure and soil of each parcel, even each row, respecting nature and the environment. this geographical and geological configuration offers a remarkable diversity of soils and exposures, resulting in a wide variety of terroirs, an exceptional advantage. the style of cos d'estournel fully reflects the richness of this diversity, making it one of the most renowned wines in the world. in 1791, louis gaspard d'estournel inherited the estates of cos and pomys, which notably included 14 hectares of vineyards. convinced of the exceptional potential of this hill, he took many risks to advance his property. his boldness also manifested financially, with acquisitions that expanded the vineyard to 45 hectares. numerous technical improvements were made to the property, reflecting a constant quest for innovation. this is reflected in the innovative use of glass stoppers and experiments with new grape varieties. around bordeaux, there are plenty of activities to discover for all tastes. here are some suggestions: discover picturesque villages: take a stroll through the charming medieval villages of the region, such as saint-émilion, blaye, or bourg-sur-gironde. admire the historic architecture, visit the centuries-old churches, and wander through the cobblestone streets. enjoy local gastronomy: indulge in bordeaux's renowned cuisine with regional specialties such as canelé pastries, oysters from the bassin d'arcachon, foie gras, or local cheeses. don't miss the opportunity to enjoy a fine meal paired with a glass of wine at one of the city's many restaurants.
