Ten sub-appellations have been created within the Niagara Peninsula. Spread across the southern part of the province, Ontario's vineyards are located near three of the Great Lakes: Ontario, Erie and Huron.
The lakes moderate the winter cold and cool the vines in the hottest part of the summer. As for the soils, experts say those of the Great Lakes basin are shifting from sand to clay and rock, with a high concentration of limestone from ancient seabeds exposed by ice ages.
The Ontario terroir is characterized by Cabernet Franc, the most popular grape variety planted in Ontario.
