Rum is a brandy, made from sugar cane or by-products of the sugar industry. Originally from the Americas, this alcohol is produced by fermentation then distillation. Its percentage of alcohol can vary considerably, but it must be at least 37.5%. Sometimes translucent, sometimes amber, sometimes brown, this brandy is the basis of many cocktails.
There are two main categories of rums: Agricultural rums which are made from the juice of the sugar cane and produced mainly in the regions of French influence, and traditional rums which are made from molasses, a thick syrup resulting from sugar refining, and produced mainly in the regions of English or Spanish influence.
In addition, one distinguishes white rum, amber rum, old rum. Indeed, the white rum is a young rum which can be drunk dry or in cocktail. The amber rum is aged between 1 and 1.5 years in oak barrels, which gives it its color. And old rum is aged for at least 3 years in one or more barrels.
