For a long time relegated to second place behind vodkas, gin has come back into fashion since the end of the 80s. Dedicated entirely to the world of cocktails and mixology, it rivals in creativity and technicality. At the controls, distillers call upon new herbs and spices. In doing so, they create new flavors, in order to pull this spirit upwards and satisfy the demands of an educated and more sophisticated clientele.
This Eau-de-vie can be made from grain or flavored molasses. This flavoring can be done naturally, by infusion or maceration of the alcohol with spices, or artificially, by the addition of natural or artificial gin essences. An essential component of gin is juniper, which gives its name to the gin.
Beyond its method of flavouring, by maceration, distillation or blending, gin is divided into different categories:
LONDON GIN: these brandies are "distilled gin" to which no artificial elements can be added except sugar.
PLYMOUTH GIN: This gin is produced by a single distillery located in Plymouth, Blackfriars Distillery, which holds the sole right to use the appellation.
OLD TOM GIN: Softer and slightly sweetened, it was more loaded in aromas to mask a harder and less pure alcoholic base than the current bases.
YELLOW GIN: A gin that has been in oak barrels for several months, giving it that special yellowish tint color.
