In 1798, Memmie Jacquesson founded the house in Châlons, but it was her son Adolphe, accompanied by Dr. Jules Guyot, who innovated and perfected the winemaking techniques.
In the 1860s, Champagne Jacquesson's reputation declined due to the premature deaths of two of Adolphe's sons.
To revitalize the business, the family acquired 11 hectares of vineyards in the Avize and Oiry Grands Crus.
In 1974, the Chiquet family purchased Champagne Jacquesson and moved to Dizy, where most of their vineyards were located.
At Jacquesson, the grapes are pressed in traditional vertical presses, which extract the juice from the grapes gently and precisely. Alcoholic fermentation then takes place in oak barrels, where the grapes are pressed gently and precisely.
The wine is then transferred to oak barrels, where it is stirred for several months.
Clarification takes place naturally, with some simple racking before printing, which is carried out without filtration.
Another characteristic that marks the personality and character of Jacquesson champagnes is the long aging of the wine in the bottle, on lees, some of which can last up to 15 years before being released to the market.
Thanks to the work carried out in the vineyards, it is possible to obtain high quality grapes,
Therefore, since the base vintage of 2000, the Cuvées 700 are the only wines produced by blending, each reflecting a specific year.
Each Cuvée 700 is available as a classic cuvée or as a post-disgorgement cuvée, giving it incredible aging potential. Each one is different from the last, a totally original concept in Champagne!
