The AOC Ajaccio extends over 240 hectares which cover 12 communes around Ajaccio, from the gulf of Porto to Sartène. With the AOC Patrimonio, it is part of the two appellations of Corsica which were the subject of a specific decree of AOC. This terroir is at the heart of a region of light and beauty where cliffs, rocky peaks, small islands and magnificent beaches alternate.
The vineyard of Ajaccio, the fruit of a very old wine-growing tradition, benefits from an average of 2,750 hours of sunshine per year thanks to the typical Corsican climate, as well as the great heat in summer moderated by maritime and mountain influences. The basic yield is limited to 45 hl/ha, for a total production barely exceeding 8,000 hl per year, available in red, rosé and white.
In the sciaccarello region par excellence, the white wines, as is often the case in Corsica, are almost exclusively made from Vermentino, with the difference that the Ajaccio AOC authorizes a complement of ugni blanc that can reach 20% of the grape variety. The dry whites have a rather pale gold dress, but a mineral nose with floral scents. The addition of ugni blanc can bring a little more smoothness and roundness in mouth.
