The AOC Maury covers mainly the terroirs of the commune of Maury, as well as part of the neighbouring communes situated to the north of the Agly valley. The vineyard covers an area of 1,150 hectares and produces about 7,000 hectoliters per year, made only on low-yield terroirs to obtain the sugar and sweetness typical of the Vins Doux Naturels.
The vineyard stretches over hills of black marl and black schist, which at night release the heat stored under the Mediterranean sun, allowing the grapes to be very rich in sugar.
The Red wines of Maury are made from black Grenache, Carignan and Syrah. The Maury red wines have a beautiful dark garnet color that tends towards mahogany over time. The AOC Maury produces several types of wines: red and white Maury, the Maury "Vendange", "Vintage" and "Récolte", the Maury "Hors d'Age" and the Maury "Rancio".
