With approximately 25,000 hectares of vineyards, the Prosecco production area near Venice in northern Italy produces large volumes of this sparkling wine. Driven by the fashion for Spritz around the world - an aperitif based on Apérol and Prosecco - the consumption of this wine has become more widespread in recent years. Cheaper than some bubble nectars, disconnected from the codified universe of wine, Prosecco has flourished in restaurants and wine shops...
Much more than a simple ingredient of the Spritz, Prosecco surprises by the plurality of its facets. Very sparkling, Prosecco spumante is consumed as an aperitif. When chilled, it gives your taste buds a boost. More delicate and complex, Prosecco frizzante is sparkling. More traditional, it is linked to the Italian art of living. The bottle containing it is often closed with a capsule or cork. Its dress can be slightly disturbed and it will be drunk fresh.
Near Venice, the province of Treviso is home to terroirs classified as DOCG (denominazione d'origine controllata e garantita): those of Conegliano, Valdobbiadene and Asolo are the most renowned. Their mention appears on the label of the bottle!
