Its necessary to know that the Rancio Sec almost disappeared from our cellars and is now back in favor in Catalonia. Resulting from direct tradition, this wine is more like an identity claim than a wine "product"!
Half a dozen winegrowers still produce Rancio Sec. They are grouped in an Association of Rancio Wine Producers. Rancios have two essential characteristics:
⁃ They are dry wines, meaning that they have undergone complete fermentation and all their sugar has been transformed into alcohol.
- They are aged in an oxidative environment . in the open air and in unfilled barrels).
