The AOC Cassis extends over 210 hectares of the town of Cassis, between the Calanques and Cap Canaille. It is undoubtedly the oldest Gallic vineyard. Well sheltered from the Mistral thanks to the height of the neighbouring hills, this AOC enjoys a very mild Mediterranean microclimate, favourable to the cultivation of a quality wine.
The harvest is done by hand and the production of this AOC is about 8.400 hl/year. The reds of this appellation are tannic, with notes of laurel and thyme, and should be drunk within three to five years.
