The Corse white wines have a "star variety", the main grape variety of all the AOC produced in Corsica: the vermentino (or vermentinu, or Corsican malvoisie). It can be found planted on no less than 1,150 hectares of the vineyard, or 17% of the surface area, in all regions of the island. The Corsican climate guarantees optimal development conditions for this late ripening grape variety well known in Italy. The productions are very typified and marked by unctuousness and fatness in the mouth. Its low acidity often leads the wine growers to blend it with other grape varieties such as ugni blanc, in order to bring enough freshness to the wine.
There are other autochthonous grape varieties alongside vermentino, starting with Bianco gentile, present in small proportions in the Figari and Sartene regions to the south. It gives the whites marked aromas (candied citrus fruits, ripe fruit). The ugni blanc also participates in the elaboration of dry white Corsican wines. Variety more productive but little aromatic, it confers on the assemblies nervousness and acidity. Codivarta, barbarossa or genovese are also among the accessory varieties in the blends.
